QUEALITY CHARACTERISTICS

The shell color is translucent, bluish or olive, but there are specimens with a brownish color of the shell. The shell with dusky stripes, reddish-brown near the antennae, the shrimp is characterized by white legs. The shell IS free of white spots caused by cold damage, black spots on the body and black stripes near the gills. No discoloration (including green or yellow discoloration).

The flesh is translucent, whitish, moderately firm, tightly adhering to the shell and difficult to peel off. Shrimp with diseases that cause the flesh to have a cooked appearance are not allowed.

The texture of the shrimp is firm. Soft to the touch shrimps are not allowed. To check for softening, place the last body segment in front of the tail between your thumb and forefinger and press down on the backbone. If the shell is firm or depresses but springs back to its original shape on releasing pressure, the shrimp is OK. If the shell remains depressed, soft or crumbles the shrimp is defective and not supplied.

Shrimp have a fresh or neutral odor and taste. Shrimp with a persistent and pronounced swampy, strong fishy, sour, rancid, pungent, acrid, other unpleasant odor (e.g., fermentation or ammonia odor) or taste are not allowed.

Shrimps can be damaged in a number of ways – from small injury marks on the shell to crushed heads and broken bodies.

Allowed:

- breakage of the rostrum, antennaes, legs and tail fins;

- up to 5% of the shrimps with broken cephalothorax.

Not allowed:

- shrimp shell separated from the flesh;

- the flesh is damaged;

- shrimp is missing the eyes, rostrum, telson or tail fins;

- shell damages into the body exposing the flesh;

- crashed cephalothorax or body.

Contamination of the shell, foreign inclusions and impurities are not allowed. The presence of live and dead parasite larvae is not allowed. The presence of eggs on the lower part of the neck is not contamination or foreign matter.

COMMON DEFECTS

-If the membrane attaching the head to the main body of the shrimp is broken and the head droops at more than 45° angle the shrimp is defective.

-A dropped head where the membrane remains attached but may be stretched and the head droops at less than a 45° angle is not a defect.

Parasites in shrimps are not allowed. External parasites damage the eyes, antennaes or rostrum, however if they are removed without damage are not defective.

White spot results from freezer burn can occur particularly where packed shrimps have not been covered correctly with a carton liner. Small patches on the head and shell are acceptable, but if all of one side is dehydrated, the shrimps are not allowed to acceptance.

Excessive moisture loss expressed as white or yellow abnormalities on the surface of the frozen shrimp block, which may penetrate below the surface of the shrimp shells. This defect cannot be removed by scraping with a knife without excessive deterioration of the appearance of the shrimp.

Melanosis is the darkening of the head, shell and tail of shrimp caused by the black pigment, melanin. It is a chemical reaction that occurs fastest in the presence of oxygen when the shrimps are not frozen.
